I don't know how I feel about this book. Normally I have one definite emotion for it but this one was just... I don't know. The beginning started off pretty good. Rainy Dey is all innocent and sweet. She is a freshman in college and upon her dad dropping her off she meets the glorious Evan and Aaron. Of course they are smoking hot so you can just imagine that she isn't exactly trying to run from them. Her roommate Olivia and her brother Lucas step in and take her under their wings.Rainy tries to stand her grown and keep Aaron at arms length but when they are put together to work on a project, Rainy can't help the way she feels for Aaron.
Lucas is a super geek but crazy sweet. He is interested in Rainy but how can he compete with sexy Aaron. Even though he knows he doesn't have a change with her, he is still there to come to the rescue whenever Rainy needs him.
Aaron can't help falling for Rainy. She's different from any girl he's met before and is willing to change his ways for her. Being the president of The Clubhouse puts some strain on their relationship. Not only does she have to worry about what other will think of her and the talk of her loosing her V card but Evan and some of Aaron's friends make Rainy question herself. 
Here is where things go downhill. Aaron is completely open with their relationship. The minute his family and old friends come into the picture, he changes. He is so set on having her claim him to the world but he can't seem to do the same. The whole last quarter of the book just pisses me off. I really didn't like the ending even if it did end with an "aww" factor.

I'm a big fan of soups. Growing up it was a big deal to have Sancocho which is so yummy. I haven't been feeling well so as I was looking through Pinterest this week I decided I would give this soup a try.

I'm calling this chicken enchilada soup because the flavors remind me of the enchilada soup at Chili's. This one has a few extras in it though with some corn and black beans. I used two kinds of cheese, a grated pepperjack cheese which adds some extra heat and melts beautifully and some crumbled cotija cheese which has a very mild flavor but adds a delicious creaminess to the soup. I poached the chicken in chicken stock with some spices and then shredded the chicken and returned it to the soup later in the cooking process. You can use boneless or bone-in chicken for this just remove the skin before cooking.

You could also make this soup in a crockpot, you'll just have to extend the cooking times - expect that it will take at least 3-4 hours on high and you'll probably want to use a 5 quart crockpot.  You can cook the chicken prior to adding to the crockpot or just put it all in together using chicken breasts cut into smaller chunks.  Add everything except the cheese and cilantro and cook.  Add the cheese and most of the cilantro just before serving to allow it time to melt, serve and top with cilantro.
Chicken Enchilada Soup
3 cups chicken stock
2 skinless, chicken breasts
2 tsp ground cumin
2 tsp ancho chili powder
1/2 tsp cayenne pepper
1 28 oz can diced tomatoes
4-6 jalapeno peppers, minced
1 green bell pepper, diced
1 large onion, diced
4 cloves garlic, minced
1 15 oz can black beans, rinsed and drained
2 cups frozen corn
1/2 cup tomato paste
8 oz cotija cheese, crumbled
8 oz pepperjack cheese, divided
1 cup cilantro, chopped
Tortilla chips
In a large Dutch oven or stockpot, add chicken stock and heat over medium heat. Add chicken breasts, cumin, chili powder, and cayenne pepper. Simmer about 20-25 minutes until chicken is cooked through. Remove chicken and set aside. Add tomatoes, jalapenos, bell pepper, onion, and garlic to the pot. Simmer about 30 minutes, covered until tomatoes have begun to break down. Add black beans, corn, and tomato paste and stir to incorporate. Add cotija cheese and half of the pepperjack cheese and stir to melt. Return chicken to soup and cook about 20 more minutes until desired consistency.
If soup isn't as thick as desired, you can add strips of flour tortillas. They will dissolve into the soup to thicken the broth. Add cilantro, reserving some to top individual bowls if desired. Ladle into serving bowls and top with crushed tortilla chips, reserved pepperjack cheese and cilantro if desired.

MEGAN



“If you’re trying to hide, babe, then you’re failing. I can see you.” Aston’s words crawl over me in a smooth caress, making my throat dry up and my blood boil simultaneously.

“Why would I be hiding?” I sit up and look forward, determined not to meet his eyes.

He shrugs a shoulder carelessly, twirling a pen between his fingers. I catch his every movement from the corner of my eye. His eyes are burning into the side of my head - they’re begging me to turn, begging me to look.

“Because you want me so badly you can’t bear to see me,” he says in a dramatic tone with a touch of arrogance.

My back straightens. “Clearly someone has been feeding your ego again,” I reply dryly. “Because I don’t remember ever telling you I want you.”

His bicep brushes mine as he leans forward. “Is that so?” he asks, his voice low and barely perceptible.

I fight the urge to drop my eyes to the desk. “Damn right it is.”

A fingertip trails down the back of my arm, the tingling feeling making me fight against a shiver.

“I think you’re wrong,” he whispers. “Because I’m pretty sure you said you wanted me on Saturday night – right before you dug those nails of yours into my back and wrapped your pretty little legs around my waist.”

My head snaps round to him, and our faces are inches apart. His lips are curled in a slightly smug smile, and I hate the fact that’s where my eyes fell first. I drag them away from his mouth and across the sharp planes of his face until they meet his smoky eyes.
